"Cheese in the Netherlands is almost always provided with a protective film, we were looking for an alternative. The development has lasted about one year, and the result is sure," says Marja Bastiaansen. An additional advantage of the natural crust, according to Marja, cheeses do not only look good on a cheese platter, but also are very tastefull.

"Cheese-making is still an art. The development of these cheeses was a difficult process. We had to include information about the sustainability of cheeses and how they evolve." In this process there were five people involved and much consultation took place. Also, the necessary test sessions preceded the introduction of this cheese. "

Marja said deliberately small cheeses, the cheeses are 700 grams, smaller in size than you are used to from Bio Cheese. "With this we fulfill the wishes of the customers." Jozef van Sas, nickname the "cheese master", is closely involved in the process of developing the small mold cheese "Authentique". He is also very satisfied with the result. "The cheeses are of a good taste, the crust is softer and looks very different. They are very fun on the table."

Bio Kaas stands for a bit more special cheeses. "Our pesto and wassabikazen are good examples. The red-culture cheese and blue cheese products are totally hand made and that is also reflected in the final result." At the company are many different disciplines under one roof . "In recent years we have grown significantly, in my opinion we are still a family business", says Marja.
